Lemon Layered Cake

This cake is very light, fluffy and full of lemon flavor. It’s especially nice to make it in the spring and summer and share with others.

Ingredients:

2 cups plain flour
1 cup self-rising flour
6 eggs
2/3 cup sugar
½ cup Crisco
2 sticks butter
1 cup milk
1 tablespoon lemon extract

Preparation:

1.Beat butter, sugar, Crisco, then eggs.
2.Add flour, milk, then flavoring extract, mix well.
3.Pour into (4) 9 inch round baking pans

Bake at 300° for 20 minutes.

Filling/Frosting

Ingredients:

1 lb box confectioner’s sugar
2 ½ sticks butter (melted)
4 tablespoons -1/2 cup lemon juice
1 can ready made lemon frosting

Preparation:

Mix ingredients well.
Put cake layers on top of each other and spread frosting on top of each layer as well as the sides of the cake.
